If you don’t like the chunks of fruit in your kombucha, you can substitute them with ginger and apple juice. However, my sincere advice is to make your own fresh apple and ginger juice at home instead of drinking store-bought juice. If you buy your own juice, ensure its fresh, organic juice that’s free from any additives.


Directions
Cut the ginger root into small pieces.
Cut the apple into thin slices, about the size of a thick matchstick.
Place a few slices of ginger and apple in each bottle.
Fill each bottle to the top with fermenting kombucha tea.
Seal and set at room temperature out of direct sunlight for 3-5 days for secondary fermentation.
Serve with ice.
For a successful Apple Ginger Kombucha recipe
The ginger and apples used should be organic.
Option for sweet apples – Pink Lady Apple or similar is great. Crispy apples are also a great option.
Do not peel the ginger. This provides additional bacteria for the fermenter.
Fill the kombucha mixture as close to the top of the jar as possible. The less space you leave above the top, the more carbon dioxide will build up inside the liquid, creating more carbonation.
If using flip-top bottles or bottles with tight-fitting lids, shake your bottles daily to prevent explosions.

Do I make basic fermentation kombucha?
In summary, you will need a SCOBY (symbiotic colony of bacteria), starter tea, sugar (such as organic cane sugar), and your tea of choice (green tea or black tea works great). If you are interested in decaf kombucha, check out this post. After you have prepared the tea, combine it with the sugar, SCOBY, and starter tea in a large glass jar. After about a week to 10 days, your kombucha will have gone through the basic fermentation process.
Are there benefits to making my own kombucha?
Making your own kombucha is the best way to enjoy this drink. The biggest advantage is that you have complete control over the ingredients used. You get to choose your kombucha culture, the type of sugar you use (for example, raw cane sugar), and the quality of the fruit. You also need to be careful not to add any other sugars or additives when working with small batches. This is not the case with store-bought kombucha.
Add Other Spices or Fruit?
Yes, of course! You can add some cinnamon, lemon juice, or anything else you like. The possibilities are endless. You can also opt to leave out the ginger and make it an apple kombucha. Another great fall flavor that tastes similar to apple cider vinegar.
