Soups and broths are a dish that many people really like, and they can be enjoyed all year. Adding fresh herbs from my garden to soups and broths in the summer is one of my favorite things to do. They make the food taste better. Congratulations to those of you who enjoy soup! I’d like to tell you which herbs to use in your next stew, broth, or soup in this post.

Types of Soup

The majority of fresh herbs are extremely adaptable and can be used in a wide range of soups, although some herbs are best used in particular soups. You can incorporate them into beef stew, homemade chicken noodle soup, and bone broth!

Lavender in soup? Yes – it’s a wonderful addition! 🌸 While lavender is often used in desserts or teas, it can also enhance savory dishes. Culinary lavender, typically English lavender, is the type best suited for cooking.
Sage

Sage is a versatile herb that can be used in a variety of dishes, including both meat and vegetable preparations. It is commonly used to season roasted meats and is a key ingredient in traditional recipes such as butter pasta, roasted vegetables, and tea. Additionally, sage enhances the flavor of many dishes.

This is a flavorful and appealing soup. The texture is silky, unlike soups thickened with cornstarch, which can be sticky. Toasting the seeds can enhance their flavor, making coriander great for use in soups, stews, rubs, and sauces.

Vegetable or chicken broth is often used as the base, and tomatoes or cream may be added for extra richness. The ingredients include fresh or dried thyme, garlic, onion, potatoes, leeks, or other root vegetables, along with broth (either vegetable or chicken) and olive oil or butter. A popular variation is potato and thyme soup, which is creamy and rustic, offering a comforting depth of herbal flavor.

What else makes a good soup?
- **Homemade Stock** – This is the foundation for a variety of soups. There are many methods to prepare homemade chicken stock, but I usually use leftover roast chicken bones from the previous day’s meal. Simply combine the bones in a large pot with filtered water and herbs, and let it simmer on low heat for 24 hours.
- Alternatively, you can use an Instant Pot for this process. In nearly every pot of soup I make, I start by sautéing some diced onion and fresh garlic in a small amount of olive oil. This step enhances the aroma and flavor of the soup beautifully!
- Our family enjoys meat in soups, often using leftover chicken breast or boiled sausage for richness and presentation as a main dish for lunch.
